Sebastien Bouillet: Career and Background

Born in 1976 in Lyon, France, Sebastien Bouillet grew up surrounded by the aromas of pastries, chocolates, and fruits. He learned the basics of confectionery at his parents’ pâtisserie, which opened in 1977.

In 2000, he took over his father’s pâtisserie and became the owner-chef. After enriching the product lineup and growing the business, he achieved the remarkable feat of becoming the youngest member of Relais Desserts in 2004, an association known for gathering France’s finest pâtissiers.

In 2021, his expertise was internationally recognized when he served dessert to President Macron at the “diner des grands chef” in Lyon. His pursuit of beauty, unwavering courage, and dedication to daily challenges reflect the valuable principles inherited from his parents.

The Chocolate Specialty Store Born from Passion

In 2010, Sebastien Bouillet realized his childhood dream by opening the chocolate specialty store “Chokola” in Lyon. The innovative store design, inspired by “Charlie and the Chocolate Factory,” has attracted significant attention.

This specialty store offers a wide range of products, from traditional bonbons chocolats to innovative chocolate sweets. They are committed to maximizing chocolate’s potential as an ingredient to provide surprise and emotion.

Furthermore, in 2015, he opened “Goûter” in Lyon, a new concept blending nostalgia with innovation. Also available in Japan, these stores offer a new style of confectionery enjoyable for both children and adults. Sebastien Bouillet’s passion for pushing creative boundaries continues to evolve.

Popular Sebastien Bouillet Chocolates

Sebastien Bouillet’s chocolates are recognized as masterpieces that combine French traditional techniques with innovative ideas. Each piece showcases both visual beauty and depth of flavor, filled with artisanal skill and artistry.

For example, their bonbons chocolats using seasonal fruits and spices are perfectly balanced while maintaining the individuality of each ingredient. The chocolate composition is precisely calculated to maximize the cacao flavors.

However, care must be taken with storage as these are delicate products. Maintaining proper temperature and avoiding direct sunlight will ensure you can enjoy them in their best condition. Also, note that the shelf life is relatively short, so it’s recommended to enjoy them soon after purchase.

The Appeal and Features of Tartlets

The tartlets developed by Sebastien Bouillet in Japan have become so popular that they’re now sold in his Lyon flagship store. These signature items feature a perfect harmony between crispy crusts and smooth fillings.

The charm of these sweets lies in their delicate taste that shows respect for Japanese food culture. While based on traditional French tart-making techniques, they achieve the perfect sweetness and texture suited to Japanese preferences.

Tartlets are also available in seasonal flavors, offering products made with the finest ingredients of each season. However, as these are popular items, they may sell out during holidays and seasonal changes. We recommend checking stock availability in advance.
